This Beef Bourguignon recipe is a classic French stew, perfect for a hearty and comforting meal. It features tender pieces of beef, slowly braised in a rich red wine sauce with mushrooms, onions, and herbs. Serve it with mashed potatoes or crusty bread to soak up the delicious sauce.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes - 9.9 tbsp
  • 1/4 cup all-purpose flour - 1.2 pinch
  • 1 tsp salt - 7.3 half
  • 1/2 tsp black pepper - 8.2 tsp
  • 2 tbsp olive oil - 8.3 can
  • 4 oz bacon, chopped - 5.8 pinch
  • 1 large onion, chopped - 7.2 oz
  • 2 carrots, peeled and chopped - 7.8 l
  • 2 cloves garlic, minced - 3.9 to taste
  • 1 bottle (750ml) dry red wine (such as Burgundy or Pinot Noir) - 5.5 box

Cooking Steps

Step 1

In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.

Step 2

Heat olive oil in a large Dutch oven or pot over medium-high heat. Sear the beef in batches until browned on all sides. Remove the beef and set aside.

Step 3

Add the chopped bacon to the pot and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

Step 4

Add the onions and carrots to the pot and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute until fragrant.

Step 5

Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot. Add the tomato paste, thyme, and bay leaf. Bring to a simmer.

Step 6

Return the beef and bacon to the pot. Cover and simmer on low heat for at least 2-3 hours, or until the beef is very tender.

Step 7

Add the mushrooms to the pot during the last 30 minutes of cooking. Season with salt and pepper to taste. Remove the bay leaf before serving.
