
Marinate the chicken: In a bowl, combine the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix well and let it marinate for at least 30 minutes, or preferably for 2-3 hours.
Grill or bake the chicken: Preheat your grill or oven to medium heat. Thread the marinated chicken onto skewers and grill for 10-12 minutes, turning occasionally, until cooked through and slightly charred. Alternatively, bake the chicken in the preheated oven for 20-25 minutes, or until cooked through.
Prepare the sauce: While the chicken is grilling or baking, heat butter in a large pan or pot over medium heat. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute.
Add tomatoes and spices: Add chopped tomatoes, tomato paste, red chili powder, turmeric powder, garam masala, and salt to the pan. Cook for 10-15 minutes, stirring occasionally, until the tomatoes soften and the sauce thickens.
Blend the sauce: Use an immersion blender or transfer the sauce to a regular blender to puree it until smooth. Return the sauce to the pan.
Add cream and chicken: Stir in fresh cream or cashew cream into the sauce. Add the grilled or baked chicken pieces to the sauce and simmer for 5-10 minutes, allowing the chicken to absorb the flavors of the sauce.
Garnish and serve: Garnish with fresh cilantro leaves. Serve hot with naan bread, rice, or roti. Enjoy!
