This classic French dish is surprisingly easy to make at home. Chicken Marengo features tender chicken pieces simmered in a rich tomato and mushroom sauce, infused with garlic, herbs, and a touch of white wine. This recipe elevates the dish with the addition of olives and capers. It’s a flavorful and comforting meal perfect for a weeknight dinner or a special occasion. Serve it with crusty bread, rice, or pasta to soak up the delicious sauce.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 2-inch pieces - 8.9 to taste
  • Salt and pepper to taste - 1.6 drop
  • 1/4 cup all-purpose flour - 4.2 half
  • 2 tablespoons olive oil - 1.8 kg
  • 8 oz cremini mushrooms, sliced - 2.6 drop
  • 1 medium onion, chopped - 8.8 bag
  • 2 cloves garlic, minced - 1.8 as needed
  • 1/2 cup dry white wine (optional) - 4.3 pcs
  • 1 (14.5 oz) can crushed tomatoes - 6.4 box
  • 1/2 cup chicken broth - 10.3 fl oz

Cooking Steps

Step 1

Season chicken pieces with salt and pepper. Dredge lightly in flour, shaking off excess.

Step 2

Heat olive oil in a large skillet over medium-high heat. Brown chicken on all sides, then remove from skillet and set aside.

Step 3

Add sliced mushrooms and chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Step 4

Pour in white wine (if using) and deglaze the skillet, scraping up any browned bits from the bottom. Let the wine reduce slightly.

Step 5

Add crushed tomatoes, chicken broth, tomato paste, dried thyme, and bay leaf to the skillet. Stir to combine.

Step 6

Return chicken to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 30 minutes, or until chicken is cooked through.

Step 7

Stir in olives and capers during the last 10 minutes of cooking. Garnish with fresh parsley before serving.
