Dredge each chicken breast in the flour, then dip in the egg, and finally coat thoroughly with the breadcrumb mixture. Press the breadcrumbs gently to adhere.
Heat olive oil in a large skillet over medium-high heat. Carefully place the breaded chicken breasts in the hot oil, ensuring not to overcrowd the pan. Cook for about 3-4 minutes per side, until golden brown and crispy. Remove the chicken from the skillet and place it on the prepared baking sheet.
Spoon tomato sauce evenly over each chicken breast, then top with mozzarella cheese. If desired, add a sprinkle of extra Parmesan cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. Remove from oven and let rest for a few minutes before serving.
Garnish with fresh basil, if desired. Serve hot over pasta, alongside a salad, or with your favorite sides.
