Ingredients

  • boneless, skinless chicken breasts - 1.5 lb
  • olive oil - 2.0 tbsp
  • garlic - 3.0 pcs
  • dried oregano - 1.0 tsp
  • dried thyme - 1.0 tsp
  • dried rosemary - 1.0 tsp
  • lemon zest - 1.0 whole
  • lemon juice - 1.0 whole
  • Salt - 1.0 to taste
  • pepper - 1.0 to taste

Cooking Steps

Step 1

In a bowl, whisk together olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, lemon zest, lemon juice, salt, and pepper to create a flavorful marinade.

Step 2

Place the chicken cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Marinate in the refrigerator for at least 1-2 hours or overnight for optimal flavor.

Step 3

Preheat your grill or grill pan to medium-high heat.

Step 4

Thread marinated chicken cubes onto skewers, alternating with cherry tomatoes and red onion chunks.

Step 5

Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.

Step 6

Remove from the grill, sprinkle with fresh chopped parsley, and serve the Chicken Provenal Skewers hot. They pair wonderfully with a side of couscous, a green salad, or a refreshing tzatziki sauce.
