Ingredients

  • 2 lbs boneless, skinless chicken breasts - 3.3 tsp
  • 1 onion, quartered - 2.6 pcs
  • 2 cloves garlic, minced - 3.1 gal
  • 1 bay leaf - 1.4 kg
  • 1 (28 oz) can diced tomatoes, undrained - 4.4 tbsp
  • 2-3 chipotle peppers in adobo sauce, plus 1-2 tablespoons adobo sauce - 10.4 gal
  • 1/2 cup chicken broth - 9.7 ml
  • 1 tablespoon olive oil - 6.1 pcs
  • Salt and pepper to taste - 7.9 dash

Cooking Steps

Step 1

In a large pot, combine the chicken breasts, onion, garlic, bay leaf, and enough water to cover the chicken. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is cooked through. Remove the chicken from the pot and let it cool slightly. Reserve about 1 cup of the cooking liquid.

Step 2

Once the chicken is cool enough to handle, shred it with two forks.

Step 3

In a blender or food processor, combine the diced tomatoes, chipotle peppers in adobo sauce, adobo sauce, and chicken broth. Blend until smooth.

Step 4

Heat the olive oil in a large skillet or pot over medium heat. Add the blended tomato mixture and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.

Step 5

Add the shredded chicken to the sauce and stir to coat. Add some of the reserved cooking liquid if the sauce is too thick. Simmer for another 10-15 minutes, allowing the chicken to absorb the flavors of the sauce.

Step 6

Season with salt and pepper to taste.

Step 7

Serve the chicken tinga in tacos, tostadas, or over rice. Garnish with your favorite toppings, such as crumbled cheese, cilantro, and sour cream.
