Ingredients

  • ripe tomatoes - 6.0 pcs
  • cucumber - 1.0 pcs
  • red bell pepper - 1.0 pcs
  • small red onion - 1.0 pcs
  • garlic cloves - 2.0 pcs
  • extra-virgin olive oil - 2.0 tbsp
  • salt - 1.0 tsp
  • ground black pepper - 0.5 tsp
  • Fresh herbs for garnish (such as basil or parsley) - 1.0 as needed

Cooking Steps

Step 1

In a blender or food processor, combine the chopped tomatoes, cucumber, bell pepper, red onion, and minced garlic.

Step 2

Blend until the ingredients are well combined and the mixture reaches a smooth consistency.

Step 3

Add the olive oil, red wine vinegar, salt, and black pepper to the blender. Blend again until everything is fully incorporated.

Step 4

Taste the soup and adjust the seasoning if needed.

Transfer the gazpacho to a large bowl or container and refrigerate for at least 1 hour to allow the flavors to meld.
