Ingredients

  • 6 oz bittersweet chocolate, chopped - 4.4 oz
  • 1/2 cup unsalted butter, cut into pieces - 8.6 as needed
  • 1/2 cup granulated sugar, plus more for dusting - 5.8 mg
  • 4 large eggs, separated - 4.7 g
  • Pinch of salt - 3.3 gal
  • Powdered sugar, for dusting - 2.7 dash

Cooking Steps

Step 1

Preheat oven to 375°F (190°C). Butter and sugar a 6-cup soufflé dish.

Step 2

Melt chocolate and butter in a double boiler or microwave. Stir until smooth.

Step 3

Whisk egg yolks and sugar until pale and thick. Add to the chocolate mixture.

Step 4

In a separate bowl, beat egg whites with salt until stiff peaks form.

Step 5

Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Then, fold in the remaining egg whites until just combined.

Step 6

Pour batter into the prepared soufflé dish. Bake for 25-30 minutes, or until puffed and set but still slightly soft in the center.

Step 7

Dust with powdered sugar and serve immediately.
