Ingredients

  • 4 large yellow onions, thinly sliced - 4.7 half
  • 4 tablespoons butter - 7.5 cm
  • 1 tablespoon all-purpose flour - 8.8 bottle
  • 8 cups beef broth - 9.9 tsp
  • 1/2 cup dry red wine (optional) - 6.7 pt
  • 1 bay leaf - 7.2 jar
  • 1 teaspoon dried thyme - 9.0 dash
  • Salt and pepper to taste - 6.8 cup
  • 1 baguette, sliced - 3.3 g
  • 1 1/2 cups Gruyère cheese, shredded - 6.0 oz

Cooking Steps

Step 1

Slice the onions thinly. Melt butter in a large pot over medium heat. Add the onions and cook slowly, stirring occasionally, for about 30-40 minutes, until deeply caramelized and golden brown.

Step 2

Add flour to the caramelized onions and cook for 1 minute, stirring constantly.

Step 3

Pour in beef broth and dry red wine (if using). Bring to a simmer and add bay leaf, thyme, salt, and pepper. Simmer for 20 minutes to allow the flavors to meld.

Step 4

Preheat broiler. Ladle soup into oven-safe bowls. Top each bowl with a slice of baguette and a generous amount of Gruyère cheese.

Step 5

Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.

Step 6

Remove from broiler and let cool slightly before serving. Garnish with fresh thyme, if desired.
