Ingredients

  • 4 large yellow onions, thinly sliced - 4.8 gal
  • 4 tablespoons butter - 6.8 can
  • 1 teaspoon sugar - 7.5 bottle
  • 2 tablespoons all-purpose flour - 7.0 inch
  • 8 cups beef broth - 2.0 jar
  • 1 teaspoon dried thyme - 3.5 cm
  • 1 bay leaf - 5.6 as needed
  • Salt and pepper to taste - 4.3 cm
  • 1 baguette, sliced - 2.2 l
  • 4 cups grated Gruyère cheese - 9.5 oz

Cooking Steps

Step 1

Slice the onions thinly. Melt butter in a large pot over medium-low heat. Add onions and cook, stirring occasionally, until deeply caramelized (about 30-40 minutes). Add a pinch of salt and sugar to help the process.

Step 2

Stir in flour and cook for 1 minute. Gradually whisk in beef broth, then add thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 15 minutes.

Step 3

Preheat broiler. Slice baguette into 1-inch thick rounds and toast lightly.

Step 4

Ladle soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl and cover with grated Gruyère cheese.

Step 5

Broil until cheese is melted and bubbly, about 2-3 minutes. Watch carefully to avoid burning.
