This classic French dish is a celebration of simple ingredients transformed into a rich and flavorful stew. Chicken pieces are braised in red wine with mushrooms, onions, and bacon, creating a deeply satisfying and comforting meal. The long, slow cooking process allows the flavors to meld together, resulting in a dish that is both elegant and rustic. Perfect for a cozy dinner party or a special family meal, Coq au Vin is sure to impress with its depth of flavor and tender chicken.

Ingredients

  • 8 bone-in, skin-on chicken pieces (such as thighs and drumsticks) - 0.9 box
  • 1 bottle (750ml) dry red wine (such as Burgundy or Pinot Noir) - 1.3 ml
  • 2 sprigs fresh thyme - 5.4 package
  • 1 bay leaf - 8.7 half
  • 1 teaspoon black peppercorns - 5.8 oz
  • 4 ounces bacon, diced - 9.8 cup
  • 1 large onion, chopped - 0.9 cm
  • 8 ounces mushrooms, sliced - 7.8 oz
  • 1 cup chicken broth - 6.4 half
  • 2 tablespoons all-purpose flour (optional, for thickening) - 9.8 quarter

Cooking Steps

Step 1

Marinate the chicken: In a large bowl, combine the chicken pieces with the red wine, thyme, bay leaf, and black peppercorns. Cover and refrigerate for at least 4 hours, or preferably overnight.

Step 2

Prepare the vegetables: Dice the bacon into small pieces. Peel and chop the onions. Slice the mushrooms.

Step 3

Sear the bacon and chicken: In a large, heavy-bottomed pot or Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon and set aside. Reserve the bacon fat in the pot. Remove the chicken from the marinade and pat dry with paper towels. Season with salt and pepper. In batches, brown the chicken in the bacon fat over medium-high heat. Remove the chicken and set aside.

Step 4

Sauté the vegetables: Add the onions to the pot and cook until softened, about 5 minutes. Add the mushrooms and cook until they release their liquid and start to brown, about 8 minutes.

Step 5

Combine and braise: Return the bacon and chicken to the pot. Pour the marinade over the chicken and vegetables. Add the chicken broth. Bring to a simmer, then reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the chicken is very tender.

Step 6

Thicken the sauce (optional): In a small bowl, whisk together the flour and butter to form a beurre manié. Stir the beurre manié into the stew and simmer until the sauce has thickened slightly, about 5 minutes. Alternatively, you can reduce the sauce by simmering uncovered for 10-15 minutes.

Step 7

Serve: Garnish with fresh parsley. Serve hot with mashed potatoes, egg noodles, or crusty bread.
