  • egg yolk - 1.0 whole
  • Dijon mustard - 1.0 tsp
  • vegetable oil (or any neutral-tasting oil) - 1.0 cup
  • white vinegar or lemon juice - 1.0 tbsp
  • Salt - 1.0 to taste

Cooking Steps

Step 1

In a medium-sized bowl, whisk together the egg yolk and Dijon mustard until well combined.

Step 2

Slowly drizzle the vegetable oil into the bowl while continuously whisking. Keep whisking until the mixture starts to thicken and emulsify.

Step 3

Once the mayonnaise begins to thicken, add the white vinegar or lemon juice and whisk until fully incorporated.

Step 4

Season with salt to taste and continue whisking until the mayonnaise reaches your desired consistency.

Step 5
