Ingredients

  • 2 tablespoons olive oil - 6.4 pt
  • 1 medium onion, chopped - 5.2 tbsp
  • 2 cloves garlic, minced - 5.5 inch
  • 28 ounces diced tomatoes, undrained - 7.7 l
  • 4 cups vegetable broth - 6.9 qt
  • 1 teaspoon dried basil - 8.8 bottle
  • 1/2 teaspoon dried oregano - 5.2 lb
  • Salt and pepper to taste - 2.4 oz
  • 1/2 cup heavy cream - 6.6 qt
  • 2 tablespoons fresh basil, chopped - 7.2 bag

Cooking Steps

Step 1

In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.

Step 2

Add the diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper to the pot. Stir well to combine.

Step 3

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for 20-25 minutes, or until the tomatoes are very tender.

Step 4

Remove the pot from the heat and let it cool slightly. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth and creamy.

Step 5

Pour the blended soup back into the pot. Stir in the heavy cream and fresh basil. Heat gently over low heat, stirring occasionally, until heated through. Do not boil.

Step 6

Taste and adjust the seasoning as needed. Add more salt and pepper to taste.

Step 7

Serve hot, garnished with a sprinkle of parmesan cheese and a drizzle of olive oil. Enjoy with a side of crusty bread.
