Ingredients

  • rolled oats - 1.0 cup
  • pitted dates - 1.0 cup
  • mixed nuts - 0.5 cup
  • nut butter - 0.3 cup
  • honey or maple syrup - 2.0 tbsp
  • ground cinnamon - 0.5 tsp
  • salt - 1.0 pinch
  • Shredded coconut or chopped nuts - 1.0 as needed

Cooking Steps

Step 1

Place the pitted dates in a bowl of warm water for about 10 minutes to soften them.

Step 2

In a food processor, combine the soaked dates and mixed nuts. Pulse until the mixture is finely chopped and begins to stick together. You should have a sticky, textured paste.

Step 3

Add the rolled oats, nut butter, honey or maple syrup (if using), ground cinnamon, and a pinch of salt to the date and nut mixture in the food processor.

Step 4

Pulse the mixture until all the ingredients are well combined, and the mixture forms a dough-like consistency.

Step 5

Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls. If desired, you can roll the balls in shredded coconut or chopped nuts for added texture and flavor.

Step 6

Place the oatmeal balls on a tray or plate and refrigerate them for about 20-30 minutes to firm up.

Step 7
