Ingredients

  • boneless, skinless chicken breasts or thighs, sliced into thin strips - 1.0 lb
  • olive oil - 0.3 cup
  • lemon juice - 2.0 tbsp
  • ground cumin - 1.0 tbsp
  • smoked paprika - 1.0 tbsp
  • ground coriander - 1.0 tsp
  • garlic powder - 0.5 tsp
  • Salt and pepper - 1.0 to taste
  • Pita bread - 1.0 as needed
  • Optional toppings: sliced tomatoes, cucumbers, red onions, parsley, hummus, tzatziki sauce - 1.0 as needed

Cooking Steps

Step 1

In a bowl, whisk together the olive oil, lemon juice, cumin, paprika, coriander, garlic powder, salt, and pepper.

Step 2

Add the chicken to the bowl and toss to coat well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

Step 3

Preheat a large skillet or grill pan over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until cooked through and slightly charred.

Step 4

Warm the pita bread in the microwave or oven, then fill with the cooked chicken and any desired toppings. Serve immediately.
