Prepare all the ingredients by slicing the protein, vegetables, and herbs into thin strips.
Fill a shallow bowl or pie dish with warm water.

For the dipping sauce, in a small bowl, whisk together the soy sauce, rice vinegar, honey or maple syrup, minced garlic, grated ginger, and sesame oil until well combined.
