In a large mixing bowl, combine the minced meat, finely chopped onions, minced garlic, grated ginger, green chilies, and fresh coriander leaves.
Add cumin powder, coriander powder, red chili powder, garam masala powder, salt, and cooking oil to the mixture.
Using your hands, knead the mixture well for about 5-7 minutes. This helps in developing the flavors and ensures that the kebabs hold together.
Preheat your grill or broiler to medium-high heat.
Take a small portion of the meat mixture and mold it onto a wooden skewer, forming a long, cylindrical kebab shape. Repeat this process with the remaining mixture.
Place the skewered kebabs on the grill or under the broiler. Cook for about 10-12 minutes, turning occasionally, until the kebabs are browned and cooked through. You can also cook them on a stovetop grill pan.
Once the kebabs are cooked and have a nice char, remove them from the grill.
Serve the Seekh Kebabs hot, garnished with lemon wedges and accompanied by mint chutney for a refreshing contrast to the spicy flavors.
