
Preheat your oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels.
In a small bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
Rub the herb mixture all over the chicken, making sure to get some under the skin of the breast. Place the lemon halves inside the chicken cavity.
Place the chicken in a roasting pan and add the potatoes, carrots and onions around the chicken. Drizzle vegetables with olive oil, salt and pepper.
Roast the chicken for about 45 minutes to 1 hour, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
Let the chicken rest for 10 minutes before carving and serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
