
Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels.
In a small bowl, mix together salt, pepper, and garlic powder. Season the chicken generously inside and out with the mixture.
Stuff the cavity of the chicken with lemon slices, rosemary sprigs, and thyme sprigs.
Place the chicken in a roasting pan and add 1 cup of chicken broth to the bottom of the pan.
Roast the chicken for 45 minutes to 1 hour, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Baste the chicken with its own juices every 15 minutes during roasting.
Let the chicken rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve. Garnish with extra herbs and lemon slices, if desired.
