
Preheat your oven to 400°F (200°C). Ensure the oven rack is in the middle position.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, salt, and black pepper. Mix well to form a marinade.
Place the chicken in a roasting pan. Using your hands, rub the lemon herb marinade all over the chicken, ensuring it is evenly coated. Lift the skin over the breast and rub some of the marinade directly onto the meat for extra flavor.
Stuff the cavity of the chicken with the halved lemon and the remaining sprigs of rosemary and thyme.
Arrange the carrots and potatoes around the chicken in the roasting pan. Drizzle them with a little olive oil and season with salt and pepper.
Roast the chicken for 45 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Use a meat thermometer to check for doneness.
Remove the chicken from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
