
Preheat oven to 400°F (200°C). Pat the chicken dry with paper towels.
In a bowl, combine olive oil, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper. Mix well.
Place the chicken in a roasting pan. Rub the lemon-herb mixture all over the chicken, including under the skin of the breast.
Arrange chopped potatoes, carrots, and onions around the chicken in the roasting pan.
Drizzle the vegetables with olive oil and season with salt and pepper.
Roast the chicken for 45 minutes to 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced with a fork.
Let the chicken rest for 10 minutes before carving. Serve hot with the roasted vegetables and pan juices.
