
Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels.
In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, lemon zest, salt, and pepper. Mix well to form a paste.
Carefully loosen the skin of the chicken breast and thighs with your fingers. Spread the herb butter mixture under the skin, ensuring even coverage. Rub any remaining butter mixture over the outside of the chicken.
Place lemon slices inside the chicken cavity. Arrange the remaining lemon slices around the chicken in a roasting pan.
Roast the chicken for 45 minutes to 1 hour, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices every 15-20 minutes.
Remove the chicken from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve with the roasted lemon slices and pan juices. Enjoy!
