
Preheat your oven to 400°F (200°C). Prepare your roasting pan by placing the vegetables on the bottom.
In a bowl, combine the softened butter, lemon zest, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper. Mix well to create a flavorful paste.
Gently loosen the skin of the chicken breast and thighs with your fingers. Spread half of the herb butter mixture under the skin, ensuring even coverage. Rub the remaining herb butter all over the outside of the chicken.
Place the chicken on top of the vegetables in the roasting pan. Stuff the lemon halves and garlic cloves into the cavity of the chicken.
Roast the chicken for 45 minutes to 1 hour, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Baste the chicken with pan juices every 15 minutes to keep it moist and golden brown.
Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve with the roasted vegetables and pan juices. Garnish with fresh herbs, if desired.
