Ingredients
4 large russet potatoes, peeled and cubed
1 tbsp butter
1 medium onion, chopped
3 garlic cloves, minced
4 cups chicken broth
1 cup whole milk
1/2 cup sour cream
1 cup shredded cheddar cheese
4 strips bacon, cooked and crumbled
2 green onions, sliced (for garnish)

Directions
Step
Boil potatoes in salted water until tender, about 15 minutes. Drain and set aside.

Melt butter in a large pot over medium heat. Sauté onion and garlic until soft.

Add chicken broth and cooked potatoes. Simmer for 10 minutes.

Use a potato masher or immersion blender to partially mash the potatoes, leaving some chunks.
