In a bowl, whisk together peanut butter and a cup of hot water to create a smooth peanut paste. Set aside.
In a large pot or Dutch oven, heat vegetable oil over medium heat.
Add chopped onions to the hot oil and saut{e} until they become translucent.
Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.
Add ground cayenne pepper, ground paprika, ground coriander, and ground cumin to the pot. Mix well to create a flavorful base.
Pour in diced tomatoes, tomato sauce, and chicken or vegetable broth. Stir to combine.
Add sliced okra, diced sweet potato, diced eggplant, and the choice of meat to the pot. Season with salt and black pepper to taste.
Bring the Maafe to a simmer, cover, and let it cook over medium-low heat for about 45 minutes to 1 hour, or until the meat is tender and the flavors have melded together.
During the last 10 minutes of cooking, stir in the peanut paste to thicken the stew. Adjust the seasoning if needed.
Serve the West African Comfort Maafe hot over cooked rice or couscous.
