This recipe is for a delightful and healthy Mediterranean Quinoa Salad. It's packed with fresh vegetables, herbs, and a tangy lemon vinaigrette. This salad is a fantastic source of protein, fiber, and vitamins, making it a perfect light lunch or side dish. Feel free to customize it with your favorite Mediterranean ingredients, such as different types of olives or cheeses. The key to a great quinoa salad is to ensure the quinoa is cooked perfectly – fluffy and not mushy. This recipe also works well as a make-ahead dish, as the flavors meld together beautifully as it sits. It’s a simple yet satisfying way to enjoy the vibrant flavors of the Mediterranean.

Ingredients

  • 1 cup quinoa - 1.7 tbsp
  • 2 cups water or vegetable broth - 9.9 half
  • 1 cucumber, diced - 0.7 g
  • 2 tomatoes, diced - 3.7 drop
  • 1/4 red onion, finely diced - 4.5 box
  • 1/2 bell pepper (any color), diced - 1.7 fl oz
  • 1/4 cup fresh parsley, chopped - 3.0 drop
  • 2 tablespoons fresh mint, chopped - 7.0 package
  • 1/4 cup olive oil - 6.0 fl oz
  • 3 tablespoons lemon juice - 2.7 tsp

Cooking Steps

Step 1

Rinse the quinoa thoroughly under cold water using a fine-mesh sieve. This removes any bitter-tasting saponins.

Step 2

In a medium saucepan, combine the rinsed quinoa with 2 cups of water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the liquid is absorbed and the quinoa is cooked through.

Step 3

While the quinoa is cooking, prepare the vegetables. Dice the cucumber, tomatoes, red onion, and bell pepper into small, bite-sized pieces. Chop the fresh parsley and mint.

Step 4

In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the lemon vinaigrette.

Step 5

Once the quinoa is cooked, fluff it with a fork and let it cool slightly. Add the cooked quinoa to the bowl with the lemon vinaigrette.

Step 6

Add the diced cucumber, tomatoes, red onion, bell pepper, chopped parsley, and mint to the bowl with the quinoa and vinaigrette. Gently toss everything together until well combined.

Step 7

Taste the salad and adjust the seasoning as needed. You may want to add more lemon juice for extra tanginess or more salt and pepper to taste. Serve immediately or chill in the refrigerator for later. Garnish with crumbled feta cheese, if desired, before serving.
