
In a large bowl, combine the chicken pieces with olive oil, ginger, cinnamon, turmeric, saffron, salt, and pepper. Mix well to ensure the chicken is evenly coated with the spices.
Heat olive oil in a large tagine or Dutch oven over medium heat. Add the chicken and brown on all sides. Remove the chicken and set aside.
Add the chopped onion to the tagine and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Return the chicken to the tagine. Add the chicken broth, apricots, and honey. Bring to a simmer, then cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.
Stir in the toasted almonds and chopped cilantro. Simmer for another 5 minutes to allow the flavors to meld.
Serve the Moroccan Tagine hot, garnished with extra almonds and cilantro. Traditionally served over couscous or rice.
