
In a large bowl, combine the chicken pieces with olive oil, ginger, cumin, turmeric, cinnamon, saffron threads, salt, and pepper. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes, or preferably longer for enhanced flavor.
Heat olive oil in a tagine or a heavy-bottomed pot over medium heat. Add the sliced onions and cook until softened and translucent, about 5-7 minutes. Add the marinated chicken and brown on all sides.
Pour in the chicken broth and add the chopped apricots, honey, and lemon juice. Stir well to combine. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 35-40 minutes, or until the chicken is cooked through and tender.
While the tagine is simmering, toast the almonds in a dry skillet over medium heat until golden brown and fragrant. Be careful not to burn them. Set aside.
Once the chicken is cooked, check the sauce and adjust the seasoning if needed. If the sauce is too thin, remove the lid and simmer for a few more minutes to reduce it slightly.
Stir in half of the toasted almonds and chopped cilantro into the tagine. Transfer the chicken tagine to a serving dish and garnish with the remaining toasted almonds and fresh cilantro.
Serve hot with couscous or crusty bread to soak up the delicious sauce. Enjoy!
