
In a large bowl, combine the chicken pieces with olive oil, saffron, ginger, cinnamon, cumin, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 20 minutes.
Heat olive oil in a tagine or a large, heavy-bottomed pot over medium heat. Add the marinated chicken and brown on all sides.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Pour in the chicken broth, add the dried apricots, raisins, and honey. Bring to a simmer, then reduce the heat to low, cover, and cook for 30-40 minutes, or until the chicken is tender.
While the tagine simmers, prepare the couscous according to package directions. Fluff with a fork and set aside.
Once the chicken is cooked, stir in the lemon juice and chopped cilantro. Taste and adjust seasoning as needed.
To serve, spoon the couscous onto a large platter and top with the chicken tagine. Garnish with toasted almonds and a sprinkle of fresh cilantro.
