
In a large bowl, toss the chicken pieces with salt, pepper, ginger, cumin, cinnamon, and saffron. Ensure the chicken is evenly coated with the spices.
Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the seasoned chicken pieces and brown on all sides. Remove the chicken and set aside.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Return the chicken to the pot. Add the chicken broth, dried apricots, raisins, and honey. Bring to a simmer, then reduce heat to low, cover, and cook for 35-40 minutes, or until the chicken is cooked through and tender.
While the tagine is simmering, prepare the couscous according to package directions.
Once the chicken is cooked, stir in the chopped cilantro and lemon juice. Taste and adjust seasonings as needed.
Serve the chicken tagine over a bed of fluffy couscous. Garnish with additional cilantro and toasted almonds, if desired. Enjoy!
