Ingredients

  • rolled oats - 1.0 cup
  • desiccated coconut - 1.0 cup
  • all-purpose flour - 1.0 cup
  • granulated sugar - 1.0 cup
  • unsalted butter - 0.5 cup
  • golden syrup or honey - 2.0 tbsp
  • baking soda - 0.5 tsp
  • boiling water - 2.0 tbsp

Cooking Steps

Step 1

Preheat your oven to 325 F (160 C). Line baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, desiccated coconut, all-purpose flour, and granulated sugar.

Step 3

In a small saucepan, melt the unsalted butter and golden syrup (or honey) over low heat. Stir until well combined.

Step 4

In a separate small bowl, dissolve the baking soda in the boiling water.

Step 5

Pour the melted butter and syrup mixture into the dry ingredients. Add the dissolved baking soda mixture. Stir until all ingredients are thoroughly combined.

Step 6

Take tablespoons of the mixture and roll them into balls. Place them on the prepared baking trays, leaving enough space between each for spreading. Flatten each ball slightly with the back of a spoon.

Step 7

Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown. They will still be soft when hot but will firm up as they cool.

Step 8

Allow the biscuits to cool on the baking trays for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, they will become crispy and ready to enjoy.
