
Pat the salmon fillets dry with paper towels and season generously with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Once the oil is shimmering, carefully place the salmon fillets skin-side down in the skillet.
Sear the salmon for 5-7 minutes, or until the skin is crispy and golden brown. Flip the fillets and cook for another 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove the salmon from the skillet and set aside. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute, or until fragrant.
Pour in lemon juice and white wine (if using) and bring to a simmer. Cook for 2-3 minutes, or until the sauce has slightly reduced.
Stir in fresh dill and season with salt and pepper to taste. Pour the lemon-dill sauce over the salmon fillets. Garnish with lemon wedges and fresh dill sprigs. Serve immediately.
Serve with asparagus or a salad.
