Lay out two of the tortillas on a clean surface.
Sprinkle half of the shredded cheese evenly over each tortilla.
Add your desired fillings on top of the cheese. You can include cooked chicken, diced bell peppers, onions, and tomatoes. For extra flavor, add a spoonful of salsa.
Sprinkle the remaining shredded cheese on top of the fillings.
Place the remaining two tortillas on top of each quesadilla to create a sandwich.
In a large skillet, heat 1 tablespoon of vegetable oil or melt 1 tablespoon of butter over medium heat.
Carefully transfer one quesadilla to the skillet and cook for about 2-3 minutes on each side or until the tortilla is golden brown, and the cheese is melted.
Repeat the process for the second quesadilla.
Remove the quesadillas from the skillet and let them cool for a minute.
Slice each quesadilla into quarters or wedges and serve hot.
Optional: Serve with sour cream and guacamole for dipping.
