Ingredients

  • 2 lbs sweet potatoes, peeled and cubed - 1.3 half
  • 2 tablespoons olive oil - 6.9 kg
  • 2 tablespoons maple syrup - 5.5 fl oz
  • 1 teaspoon ground cinnamon - 9.2 oz
  • 1/2 teaspoon ground ginger - 9.2 to taste
  • 1/4 teaspoon ground nutmeg - 4.3 cm
  • 1/2 teaspoon salt - 2.1 lb
  • 1 (13.5 oz) can coconut milk - 0.8 kg
  • Optional: toasted pecans or chopped cilantro for garnish - 2.7 quarter

Cooking Steps

Step 1

Preheat oven to 400°F (200°C). Peel the sweet potatoes and cut them into 1-inch cubes.

Step 2

In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, ginger, nutmeg, and salt.

Step 3

Spread the sweet potatoes in a single layer on a baking sheet.

Step 4

Roast for 20 minutes, then stir and add the coconut milk to the baking sheet.

Step 5

Continue roasting for another 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized.

Step 6

Remove from oven and let cool slightly before serving.

Step 7

Garnish with toasted pecans or chopped cilantro if desired.
