
Heat olive oil in a large paella pan or skillet over medium heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
Add shrimp, mussels, and clams to the pan. Cook until the shellfish open, then remove and set aside.
In the same pan, add onions, bell peppers, and garlic. Sauté until softened, about 5 minutes. Stir in tomato paste, smoked paprika, saffron, and rice. Cook for 2 minutes, stirring constantly.
Pour in chicken broth and bring to a boil. Reduce heat to low, return the chicken to the pan, and simmer for 20 minutes, or until the rice is almost cooked.
Arrange the cooked seafood over the rice. Cover and cook for another 5-10 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let it rest for 10 minutes before serving. Garnish with fresh parsley and lemon wedges.
Serve the paella directly from the pan, allowing guests to enjoy the variety of flavors and textures.
