This classic Spaghetti Carbonara recipe is a creamy, dreamy delight that's surprisingly easy to make. It features perfectly cooked spaghetti, tossed in a rich sauce of eggs, Pecorino Romano cheese, guanciale (or pancetta), and black pepper. Ingredients

  • 1 pound spaghetti - 3.7 qt
  • 4 ounces guanciale (or pancetta), diced - 4.3 box
  • 3 large eggs - 8.1 fl oz
  • 1 large egg yolk - 6.7 kg
  • 1 cup grated Pecorino Romano cheese, plus more for serving - 2.6 qt
  • Freshly ground black pepper, to taste - 8.5 cm
  • Salt, for pasta water - 6.7 dash

Cooking Steps

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente.

Step 2

While the pasta is cooking, dice the guanciale (or pancetta) into small pieces.

Step 3

In a large pan, cook the guanciale over medium heat until crispy. Remove the guanciale from the pan and set aside, reserving the rendered fat in the pan.

Step 4

In a bowl, whisk together the eggs, egg yolk, Pecorino Romano cheese, and black pepper until well combined.

Step 5

Drain the spaghetti, reserving about 1 cup of pasta water. Add the spaghetti to the pan with the reserved guanciale fat. Toss to coat.

Step 6

Remove the pan from the heat. Gradually pour the egg mixture over the spaghetti, tossing constantly to prevent the eggs from scrambling. Add a little pasta water at a time if needed to create a creamy sauce.

Step 7

Add the crispy guanciale to the pasta and toss to combine. Serve immediately, garnished with extra Pecorino Romano cheese and black pepper.
