Cook the noodles according to package directions. Drain and rinse with cold water to stop cooking. Set aside.In a large bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, chili garlic sauce, ginger, and garlic. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.

  • 1/4 cup soy sauce - 6.8 bottle
  • 2 tablespoons rice vinegar - 2.2 whole
  • 1 tablespoon honey - 5.4 tbsp
  • 1 teaspoon sesame oil - 1.0 cup
  • 1-2 teaspoons chili garlic sauce (or to taste) - 6.8 package
  • 1 teaspoon grated ginger - 7.7 kg
  • 2 cloves garlic, minced - 3.3 gal
  • 2-4 tablespoons water (to adjust sauce consistency) - 4.4 pt

Cooking Steps

Step 1

Cook the noodles according to package directions. Drain and rinse with cold water to stop cooking. Set aside.

Step 2

In a large bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, chili garlic sauce, ginger, and garlic. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.

Step 3

Add the cooked noodles, shredded carrots, sliced bell pepper, chopped scallions, and edamame to the bowl with the sauce. Toss well to ensure the noodles and vegetables are evenly coated.

Step 4

Garnish with sesame seeds and chopped peanuts.
