Ingredients

  • boneless, skinless chicken breasts - 4.0 pcs
  • fresh spinach leaves, chopped - 1.0 cup
  • crumbled feta cheese - 0.5 cup
  • chopped sun-dried tomatoes - 0.3 cup
  • garlic, minced - 1.0 whole
  • Salt and pepper - 1.0 to taste
  • olive oil - 2.0 tbsp

Cooking Steps

Step 1

Preheat the oven to 3750F (1900C).

Step 2

In a mixing bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, salt, and pepper.

Step 3

Using a sharp knife, make a pocket in each chicken breast by cutting a slit lengthwise, being careful not to cut through the other side.

Step 4

Stuff each chicken breast with the spinach and feta mixture.

Step 5

In a large skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and cook for 5-7 minutes on each side or until golden brown.

Step 6

Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through.

Step 7

Serve hot with your favorite side dish.
