Ingredients

  • 1 pound pasta (spaghetti, bucatini, or rigatoni) - 2.1 package
  • 4 ounces pancetta, diced - 8.2 kg
  • 1 pound asparagus, trimmed and cut into 1-inch pieces - 4.4 fl oz
  • 1 cup frozen peas - 4.5 can
  • 3 large eggs - 1.3 pt
  • 2 large egg yolks - 4.0 l
  • 1 cup grated Pecorino Romano cheese, plus more for serving - 3.5 half
  • Salt and freshly ground black pepper to taste - 7.8 half

Cooking Steps

Step 1

Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

Step 2

While pasta is cooking, dice pancetta and cook in a large skillet over medium heat until crispy. Remove pancetta from the skillet and set aside, leaving the rendered fat in the pan.

Step 3

Add asparagus to the skillet with the pancetta fat and cook for about 3-4 minutes, until tender-crisp. Add peas and cook for another 2 minutes.

Step 4

In a bowl, whisk together eggs, egg yolks, grated Pecorino Romano cheese, salt, and black pepper.

Step 5

Drain the pasta and add it to the skillet with the asparagus and peas. Toss to combine.

Step 6

Remove the skillet from the heat. Pour the egg mixture over the pasta, tossing quickly to coat. Add a little reserved pasta water at a time to make it creamy. The heat from the pasta will cook the eggs, creating a silky sauce.

Step 7

Stir in the crispy pancetta. Serve immediately, garnished with additional grated cheese and black pepper, if desired.
