In a bowl, whisk together the eggs, heavy cream, Dijon mustard, dried thyme, salt, and pepper until well combined.
Sprinkle half of the grated cheese over the pie crust, spreading it evenly.
Pour the egg mixture over the cheese, ensuring it fills the pie crust.
Sprinkle the remaining cheese on top of the egg mixture.
Bake the pie in the preheated oven for approximately 35-40 minutes or until the crust is golden and the filling is set.
Once done, remove the pie from the oven and let it cool for a few minutes.
Garnish with fresh parsley before serving.
