Ingredients

  • 1 pound spaghetti - 5.7 kg
  • 4 ounces pancetta, diced - 2.3 oz
  • 3 large eggs - 6.5 kg
  • 1 large egg yolk - 1.6 ml
  • 1 cup grated Parmesan cheese, plus more for garnish - 5.8 quarter
  • 1 teaspoon freshly ground black pepper, plus more for garnish - 1.5 pt
  • Salt, to taste - 4.1 lb

Cooking Steps

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

Step 2

While the pasta is cooking, dice the pancetta and cook it in a large skillet over medium heat until crispy. Remove the pancetta from the skillet and set aside, reserving the rendered fat in the pan.

Step 3

In a bowl, whisk together the eggs, egg yolk, grated Parmesan cheese, and black pepper until well combined.

Step 4

Drain the pasta and add it to the skillet with the reserved pancetta fat. Toss to coat.

Step 5

Remove the skillet from the heat. Immediately pour the egg mixture over the hot pasta, tossing quickly and continuously to create a creamy sauce. Add a little of the reserved pasta water if needed to adjust the consistency.

Step 6

Add the crispy pancetta to the pasta and toss to combine.

Step 7

Serve immediately, garnished with extra grated Parmesan cheese and freshly ground black pepper.
