Ingredients

  • 1 large eggplant, cubed - 4.4 tsp
  • 1 large onion, chopped - 7.0 dash
  • 2 celery stalks, chopped - 8.7 drop
  • 2 cups diced tomatoes - 4.9 package
  • 1/2 cup green olives, pitted and sliced - 1.4 bag
  • 2 tablespoons capers, rinsed - 5.2 l
  • 1/4 cup red wine vinegar - 6.0 quarter
  • 2 tablespoons sugar - 0.8 to taste
  • Olive oil for frying - 2.0 cup
  • Salt and pepper to taste - 7.0 as needed

Cooking Steps

Step 1

Cut the eggplant into 1-inch cubes, salt generously, and let it sit in a colander for 30 minutes to drain excess moisture.

Step 2

Rinse the eggplant and pat it dry. Heat olive oil in a large skillet over medium-high heat and fry the eggplant until golden brown. Set aside.

Step 3

In the same skillet, sauté the chopped onion and celery until softened. Add the diced tomatoes, olives, and capers.

Step 4

Stir in the sugar and vinegar. Let the mixture simmer for about 15 minutes, allowing the flavors to meld together.

Step 5

Return the fried eggplant to the skillet. Mix well to combine with the sauce.

Step 6

Simmer for another 10 minutes, stirring occasionally, until the caponata has thickened to your liking.

Step 7

Let the caponata cool to room temperature or chill in the refrigerator before serving. Garnish with fresh basil leaves.
