Ingredients

  • 1 pound spaghetti - 3.8 tsp
  • 4 ounces pancetta, diced - 2.8 tbsp
  • 3 large egg yolks - 3.8 quarter
  • 1 large whole egg - 6.6 can
  • 1 cup grated Pecorino Romano cheese, plus more for serving - 4.0 pcs
  • Freshly ground black pepper, to taste - 5.1 cm
  • Salt, for pasta water - 0.7 half

Cooking Steps

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

Step 2

While the pasta is cooking, dice the pancetta into small pieces.

Step 3

In a large pan, cook the pancetta over medium heat until crispy. Remove the pancetta and set aside, leaving the rendered fat in the pan.

Step 4

In a bowl, whisk together the egg yolks, whole egg, grated Pecorino Romano cheese, and black pepper until well combined.

Step 5

Drain the spaghetti and add it to the pan with the pancetta fat. Toss to coat.

Step 6

Remove the pan from the heat. Pour the egg mixture over the hot pasta, tossing quickly and continuously to create a creamy sauce. Add a little of the reserved pasta water if needed to adjust the consistency.

Step 7

Serve immediately, garnished with the crispy pancetta and extra Pecorino Romano cheese and black pepper.
