Ingredients

  • 2 tablespoons olive oil - 1.4 fl oz
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces - 2.0 jar
  • 4 ounces Spanish chorizo, sliced - 3.8 to taste
  • 1 onion, chopped - 1.0 dash
  • 1 red bell pepper, chopped - 6.1 pinch
  • 3 cloves garlic, minced - 3.2 jar
  • 1 tablespoon tomato paste - 3.9 whole
  • 1 1/2 cups Spanish paella rice (Bomba or Arborio) - 9.2 ml
  • 4 cups chicken broth - 7.4 g
  • 1/4 teaspoon saffron threads - 2.3 as needed

Cooking Steps

Step 1

Heat olive oil in a large paella pan or skillet over medium heat. Add chicken and chorizo and cook until browned on all sides. Remove from pan and set aside.

Step 2

Add onion, bell pepper, and garlic to the pan and cook until softened, about 5 minutes. Stir in tomato paste and cook for another minute.

Step 3

Add rice to the pan and stir to coat with the vegetables and oil. Cook for 2 minutes, stirring constantly.

Step 4

Pour in chicken broth and stir in saffron threads, smoked paprika, salt, and pepper. Bring to a simmer.

Step 5

Arrange chicken and chorizo over the rice. Add shrimp, mussels, and clams to the pan, nestling them into the rice. Do not stir after this point.

Step 6

Reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is cooked through and the seafood is open. Discard any mussels or clams that do not open.

Step 7

Remove from heat and let rest for 5-10 minutes before serving. Garnish with parsley and lemon wedges.
