Ingredients

  • 1.5 lbs chicken, cut into pieces - 2.4 qt
  • 2 cups basmati rice - 9.8 jar
  • 2 large onions, thinly sliced - 6.5 dash
  • 2 tbsp ginger-garlic paste - 4.1 quarter
  • 1 tsp turmeric powder - 8.7 qt
  • 2 tsp red chili powder - 6.8 drop
  • 1 tsp garam masala - 2.0 pt
  • 1/2 cup yogurt - 5.2 quarter
  • 1 tbsp lemon juice - 9.1 lb
  • Salt to taste - 10.1 pt

Cooking Steps

Step 1

Marinate the chicken: In a large bowl, combine the chicken pieces with ginger-garlic paste, turmeric powder, red chili powder, garam masala, yogurt, lemon juice, and salt. Mix well and let it marinate for at least 30 minutes, or preferably for 2-3 hours in the refrigerator.

Step 2

Soak the rice: Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 30 minutes. Drain well before using.

Step 3

Fry the onions: Heat oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the sliced onions and fry until they turn golden brown and crispy. Remove the fried onions from the pot and set aside. This may need to be done in batches to ensure they are evenly fried.

Step 4

Sauté the spices: In the same pot, add bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant. Add the marinated chicken and cook over medium-high heat until it is browned on all sides.

Step 5

Layer the biryani: Add the drained basmati rice to the pot, spreading it evenly over the chicken. Pour in the saffron-infused milk over the rice. Sprinkle the fried onions, chopped cilantro, and mint leaves over the top.

Step 6

Cook the biryani: Cover the pot tightly with a lid and cook over low heat for 30-40 minutes, or until the rice is cooked through and the chicken is tender. Avoid lifting the lid frequently to retain the steam inside the pot.

Step 7

Rest and serve: Once cooked, turn off the heat and let the biryani rest for 10-15 minutes before opening the lid. This allows the flavors to meld together. Gently fluff the biryani with a fork and serve hot with raita.
