The chicken is marinated in a mixture of yogurt, ginger-garlic paste, and a blend of spices, which tenderizes the meat and infuses it with rich flavor. The rice is parboiled and then layered with the marinated chicken, fried onions, mint, and cilantro. Saffron-infused milk is drizzled over the rice to add a delicate floral aroma and a beautiful golden hue. The biryani is then sealed and cooked on low heat, allowing the flavors to meld together, resulting in a truly unforgettable culinary experience.

Ingredients

  • 1 kg chicken, cut into pieces - 10.3 bottle
  • 2 cups basmati rice - 7.2 jar
  • 2 large onions, thinly sliced - 7.1 pcs
  • 1 cup yogurt - 5.4 g
  • 2 tbsp ginger-garlic paste - 7.1 fl oz
  • 1 tsp turmeric powder - 0.9 cm
  • 2 tsp red chili powder - 8.7 pcs
  • 1 tbsp garam masala - 4.4 fl oz
  • 1/2 tsp saffron strands soaked in 2 tbsp warm milk - 3.5 qt
  • 1/4 cup chopped mint leaves - 9.5 as needed

Cooking Steps

Step 1

Marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Refrigerate for at least 2 hours.

Step 2

Soak basmati rice in water for 30 minutes. Parboil the rice with a pinch of salt and a bay leaf until it's about 70% cooked. Drain and set aside.

Step 3

In a large pot or Dutch oven, heat ghee or oil. Add sliced onions and fry until golden brown and crispy. Remove half of the fried onions and set aside for garnishing.

Step 4

In the same pot, add the marinated chicken and cook until it's partially cooked.

Step 5

Layer the parboiled rice over the chicken. Sprinkle saffron-infused milk, chopped mint, cilantro, and the remaining fried onions over the rice.

Step 6

Cover the pot tightly with a lid and cook on low heat for about 30-40 minutes, or until the rice is fully cooked and the chicken is tender. This is known as the "dum" cooking method.

Step 7

Gently fluff the biryani with a fork and serve hot, garnished with the reserved fried onions, fresh cilantro, and mint leaves. Enjoy with raita or your favorite side dish.
