Ingredients

  • 4 boneless, skinless chicken breasts - 4.9 as needed
  • 1/2 cup all-purpose flour - 4.0 jar
  • 2 large eggs, beaten - 9.4 bottle
  • 1 1/2 cups breadcrumbs - 9.1 qt
  • 1/2 cup grated Parmesan cheese - 10.1 ml
  • 1 teaspoon Italian seasoning - 1.1 package
  • 1/2 cup olive oil - 8.3 mg
  • 2 cups tomato sauce - 7.0 ml
  • 8 ounces mozzarella cheese, sliced - 1.8 bag
  • Fresh basil leaves, for garnish - 4.3 mg

Cooking Steps

Step 1

Prepare the chicken: Place chicken breasts between sheets of plastic wrap and pound to 1/4-inch thickness. Season with salt and pepper.

Step 2

Set up breading station: In three separate shallow dishes, place flour, beaten eggs, and breadcrumbs mixed with Parmesan cheese and Italian seasoning.

Step 3

Bread the chicken: Dredge each chicken cutlet in flour, then dip in beaten eggs, and finally coat with breadcrumb mixture, pressing to adhere.

Step 4

Fry the chicken: Heat olive oil in a large skillet over medium-high heat. Fry chicken cutlets for 3-4 minutes per side, until golden brown and cooked through. Remove and drain on paper towels.

Step 5

Assemble: Spread a thin layer of tomato sauce in the bottom of a baking dish. Place fried chicken cutlets on top, then spoon more sauce over each cutlet. Top with mozzarella cheese slices.

Step 6

Bake: Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly.

Step 7

Serve: Garnish with fresh basil and serve hot over your favorite pasta.
