
In a large bowl, season the chicken pieces with salt and pepper.
In a large Dutch oven or pot, heat olive oil and butter over medium-high heat. Brown the chicken pieces in batches, then set aside.
Add bacon to the pot and cook until crisp. Remove bacon and set aside, reserving the bacon fat in the pot.
Add onion, carrots, and celery to the pot and cook until softened. Add garlic and cook for another minute.
Return the chicken and bacon to the pot. Pour in the red wine and chicken broth. Add tomato paste, thyme, and bay leaf. Bring to a simmer.
Cover the pot and simmer for 30-40 minutes, or until the chicken is cooked through.
Add mushrooms and pearl onions to the pot and cook for another 10-15 minutes, or until the mushrooms are tender. Garnish with fresh parsley and serve.
It was a decent Coq au Vin. I think the wine flavor was a bit too strong for my taste. Maybe I'll use a lighter wine next time, or add a touch of sweetness to balance it out.
A very tasty and comforting meal. The sauce was particularly good, full of flavor. Next time I will try to find a better quality of bacon to further enhance the final product.
