Ingredients

  • 8 bone-in, skin-on chicken thighs - 10.1 can
  • Salt and pepper to taste - 8.5 to taste
  • 1/4 cup all-purpose flour - 1.9 dash
  • 2 tablespoons olive oil - 7.5 oz
  • 4 slices bacon, chopped - 3.5 drop
  • 1 large onion, chopped - 1.5 l
  • 2 carrots, chopped - 5.2 drop
  • 2 celery stalks, chopped - 4.3 package
  • 8 ounces cremini mushrooms, sliced - 3.3 half
  • 2 cloves garlic, minced - 7.4 pcs

Cooking Steps

Step 1

In a large bowl, season the chicken thighs generously with salt and pepper. Dredge the chicken in flour, shaking off any excess.

Step 2

In a large Dutch oven or pot, heat the olive oil over medium-high heat. Brown the chicken thighs in batches, about 3-4 minutes per side. Remove the chicken from the pot and set aside.

Step 3

Add the bacon to the pot and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot. Add the onions, carrots, and celery to the pot and cook until softened, about 5-7 minutes.

Step 4

Add the mushrooms and garlic to the pot and cook until the mushrooms are browned, about 5 minutes. Stir in the tomato paste and cook for 1 minute.

Step 5

Pour in the red wine and bring to a simmer, scraping up any browned bits from the bottom of the pot. Add the chicken broth, thyme, and bay leaf.

Step 6

Return the chicken and bacon to the pot. Bring to a simmer, then reduce the heat to low, cover, and simmer for 1 hour, or until the chicken is tender.

Step 7

Remove the chicken from the pot and set aside. Increase the heat to medium-high and simmer the sauce for 10-15 minutes, or until it has thickened slightly. Return the chicken to the pot and heat through. Garnish with fresh parsley before serving.
