This recipe is for a classic lasagna Bolognese, a comforting and hearty dish perfect for a family dinner or special occasion. It features layers of rich meat sauce, creamy béchamel, and melted cheese, all baked to golden perfection. The lasagna is a true labor of love, but the result is well worth the effort. This dish requires patience and attention to detail, but each layer contributes to a symphony of flavors and textures. This recipe uses fresh pasta sheets for the best taste, but dried ones can be used as well.

Ingredients

  • 1 pound ground beef - 4.9 pinch
  • 1/2 pound ground pork - 9.8 can
  • 4 ounces pancetta, diced - 1.7 whole
  • 1 large onion, chopped - 8.9 lb
  • 2 carrots, chopped - 5.5 pcs
  • 2 celery stalks, chopped - 7.0 box
  • 2 tablespoons tomato paste - 5.3 tsp
  • 1 cup dry red wine - 6.1 fl oz
  • 28 ounces crushed tomatoes - 6.0 mg
  • 1 cup beef broth - 4.6 bag

Cooking Steps

Step 1

Prepare the Bolognese sauce: In a large pot, brown the ground beef, pork, and pancetta over medium-high heat. Drain excess fat. Add the chopped vegetables (onion, carrot, celery) and cook until softened, about 8-10 minutes. Stir in the tomato paste and cook for another 2 minutes. Pour in the red wine and let it reduce by half. Add the crushed tomatoes, beef broth, and herbs (bay leaf, oregano, basil). Season with salt and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for at least 2 hours, or up to 4 hours, stirring occasionally.

Step 2

Make the béchamel sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, until a smooth paste forms (a roux). Gradually whisk in the warm milk, making sure to avoid any lumps. Bring to a simmer, stirring constantly, until the sauce thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and stir in the grated Parmesan cheese, nutmeg, salt, and white pepper. Set aside.

Step 3

Cook the pasta: If using fresh pasta sheets, no pre-cooking is necessary. If using dried lasagna noodles, cook them according to package directions until al dente. Drain and rinse with cold water to prevent sticking.

Step 4

Assemble the lasagna: Preheat oven to 375°F (190°C). Spread a thin layer of Bolognese sauce on the bottom of a 9x13 inch baking dish. Cover with a layer of pasta sheets, overlapping as needed. Spread a layer of Bolognese sauce over the pasta, followed by a layer of béchamel sauce. Sprinkle with grated mozzarella cheese.

Step 5

Repeat layers: Continue layering pasta, Bolognese sauce, béchamel sauce, and mozzarella cheese until all ingredients are used, ending with a layer of béchamel sauce and a generous layer of mozzarella and Parmesan cheese on top.

Step 6

Bake the lasagna: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 20 minutes, or until the top is golden brown and bubbly. Let the lasagna rest for 15-20 minutes before slicing and serving.

Step 7

Serve: Garnish with fresh basil leaves, if desired. Serve warm and enjoy!
